the simple syrup to my cakes ? Is it right before I cover the cake or a few hours before? And how much would you add to it? icon_confused.gificon_confused.gificon_confused.gif

I make my simple syrup while my cake is cooling. Once the cake, and the syrup is cool I use a pastry brush to give the cake a good coating.

I do the same thing. Although I do cut the tops off my cakes to level and then brush the cut surfaces with the syrup. Then I put them on a cake cardboard, wrap with plastic wrap and freeze.

I apply my simple syrup while it is hot and the cake is still warm. I use my cake tester and poke holes through the cake and then use a pastry brush to apply the syrup. The holes (which aren't evident when using the cake tester) allow the syrup to penetrate through the cake.

Thanks so much!! Can youo also use a squirt bottle to do this? And how much should you put in?

Yes you can use a squirt bottle as well. I have never tried that method but I know I have heard others say they have. When I use a brush I go over the cake twice (once in the horizontal direction and then the second time vertically).

Is this for when you are putting fondant on it? Why do you want it to run down in the cake?? I don't use fondant, so I guess I don't need this, right???

Candy, simple syrups are used to make cakes more moist. They are used before a cake is frosted.

ok, so I used to bartend and we used a simple syrup of hot water and sugar, is the cake version the same?

equal parts water and sugar, yes it is the same. I sometimes add a flavoring to it just to enchance the flavor of the cake.
