I was going to make this cake yesterday but got stuck.... susanmm23
responded .. now I know what sorbitol is but I still don't know how I should substitute .. the recipe calls for 1/2 cup sorbitol ... should I just substitute for 1/2 cup splenda or 1/2 cup liquid sweetener ..... I think this will be my last diabetic cake!!

How ever you use sorbitol (a sweetener), make sure no one eats much of it because it can & does cause severe cramping & diarhea.
Personally I can't eat any of it as it affects me quickly & harshly.
I would use splenda!!

i would use splenda as well. you have to be care ful of using any sugar substitues as most are what they call natural laxitaves. anything sugar free can cause the cramping and diarhea.

I'm going to kill my partner ... she is the one that got me into this mess!!!!! she told the person that I'm baking for that she would be out of town but she would ask me to do it ... so I said o.k. ..... a few days after I accepted the order the girl tells me that it's for her diabetic husband .... the customer was my son's preschool teacher and his first crush on a teacher ....she treated him like gold ....so....how do I back out??? I can't icon_cry.gif ... and now I just got to hope I don't send everyone to the bathroom icon_eek.gif

Use your regular cake recipe and sub Splenda for Sugar 1 cup sugar=1 C Splenda. For every Cup Splenda add 1/2 tsp baking soda. This is a much easier way to make a sugar free cake. You can get more info on baking with Splenda at their website. www.splenda.com
