Frozen Ri On Cookies????

Would it be okay to decorate cookies (w/ RI) and then place them in the freezer until the event??? (April 13 and 14). The reason I ask is b/c I have 7doz cookies, 1 wedding shower cake, 2 baby shower cakes, and 1 birhtday cake due - ALL ON THE SAME WEEKEND - the 13 and 14. Aaaaacckkkk! Please help.

I just want to know if this is okay so that I can make them in advance and not KILL myself two weeks from now!!! icon_lol.gif Thanks!

I don't have a lot of experience, but I froze some for a week and they were great. I think they should be fine.

Yes! They will be fine. You need to make sure you wrap them airtight in plastic wrap using three or four layers. Place a layer between the rows of cookies as well. Then place the well wrapped cookies in a container with a tight fitting lid and they freeze well for quite some time. I have had them in the freezer for as long as two months and they were just as nice when I took them out as when I put them in.

I am editing this to say; Be sure your Royal Icing has set up well before freezing. 48 hours would be good.

Why don't you consider using Rolled Buttercream, cut out your shapes, make designs on them and then freezing them until you bake the cookies. Then pop the frozen rolled buttercream design on top of the hot cookie and your done.

Maybe if you wrapped them and then put them in an airtight container? I was going to suggest letting them defrost before unwrapping them, but I think someone with more experience with this procedure needs to give you the final word on that.

Maybe you could try one and see how well it defrosts before you go ahead with the whole batch.

One other thing--
when you take them out of the freezer, DO NOT UNWRAP THEM until they are completely thawed and room temp. This will keep condensation from getting in the wrapping.

The condensation won't get the cookies soggy if I leave the wrap on???

No--condensation will not form if you don't open the bag. Be sure when you put cookies in freezer bag or container that all the air is squished out. If you use a ziploc freezer bag, insert a straw then close as much as possible, suck all the air out through the straw while pulling straw out and finish closing bag. Voila, you've made your own vacuum packed seal.

May take a couple of times but I do this with all my freezer goods.

I need to make some cookies in advance as well but wanted to use RBC. could these be frozen in advance with the same precations.

I almost always freeze my cookies, which are normally MMF with Royal accents. Normally I just freeze them with the mmf and do the royal just before they're due, but currently the easter cookies for this weekend are all decorated and waiting for me! They thaw really quickly too.
