A friend of mine has asked me to make a French Cheesecake for her. I've found a couple of recipes for them, but they all seem to call for French Cheese or Double Creme. I don't think I've ever seen either of these before. Does anyone know if they have another name or where I can find them? Help!

maybe check with some recipe or cooking websites! Sounds like it might be cream cheese though! Hope this helps a little! icon_biggrin.gif

i looked up a recipe and this is what it suggests for a soft french cheese:

"Fromage Blanc is a good choice; a soft French Double or Triple creme, these work the best"

i would try something like wild oats or a specialty store to find these.

Thanks. The recipes actually contain "French Cheese" and cream cheese, so they're definitely something different. All I had found so far was that it was 60% milkfat. I've never heard of Wild Oats...hmm, off to Google I go.

Balducci's sells gourmet foods you might want to try them. There is one in Bethesda and one in DC.
