From the Wilton Decorating Room:

Icing Styrofoam Dummies

Use an ice pick or large meat fork to hold cake. With royal icing in medium consistancy, ice top first then sides.

If icing several cakes, ice all the tops first, this gives them a chance to dry a bit. Ice the sides next.

Let dummy dry overnight

The next day, sand with medium grit sandpaper. Sand smooth then clean off with damp cloth. Sanding gives a nice smooth surface

Using thin icing, ice cake again, tops first then sides. Let dry several hours and your cake will be ready to decorate

Hope this helps,
