Spice cake is wonderful.

I have one ordered for a wedding, with mocha filling...

I've also heard of apricot, lemon/lime or a nut filling recommended, but never tried those.

I recently tried a banana filling with a spice cake and it was very good...just used regular buttercream for frosting with a bit of cinamon and nutmeg in it, but don't use the spices if you don't want to see the little specs heh... was very yummy!

I love coffee flavored buttercream on a spice cake, but cream chesse icing sounds really good too.
Here is an older recipe for a Caramel Apple spice cake, but you could use just the filling on a regular spice cake and it would be really good too.

Wow, I may try the caramel, but what do you think would be better, cinnamon frosting or caramel frosting?

For my DH birthday i made a spice cake with an apple compote type filling. i make a cinnamon buttercream to be the first layer...and then i made a caramel frosting over that, once the cimmamon BC crusted to keep in the crumbs and filling. it was really yummy.

One of my more popular fall wedding cakes is rum-spice cake with either lemon curd or blackberry filling and cream cheese icing.
