I figure about 16 servings in an eight inch square pan.

You can actually get 20 servings from an 8" square cake that's 3" deep.

I went to a 10 inch round. Did I screw up big time?
She needs 30 servings.

8" square: If you cut them 2x2", you will get 16. If you cut them 2x1", you will get 32.

According to the Wilton chart, a 10" round, 3" deep, 1 layer will serve 38. (The chart doesn't give piece-size dimensions).
