I going to do my first stacked cake, just for fun, and I'm not clear on one thing. Do I cut the dowels long enough to come to the top of the cake and then ice, or do I ice the cake and then put the dowel in to the top of the cake and icing? Does my question make sense?

You ice the cake first then cut the dowels and place in the cake. It sounds harder than it really is. You will do just fine.. icon_biggrin.gif

Ice your cake first then do the dowels b/c you dont want your top cake to sink into the icing. Make sure all your dowels are the same size, even if one sticks a bit higher than the top of your cake, otherwise it will tilt (I know from experience on a wedding cake I did!!) Good Luck!

There are really easy to do, you might consider plastic straws which are really easy to cut and push into the cake layer. (You don't use straws if you're going to stack several layers because they may not support the weight.) Have fun!
