I used a recipe from here for a Red Velvet cake today. Can someone tell me if it should have a chocolate taste? It is the Red Velvet Southern Style recipe. It only called for one teaspon of cocoa? It taste ok but had wondered about that amount of cocoa. I had never eaten RV that I know of and wasn't sure of the taste. The cake is in my photos. Not meant to be decorated so be nice...ha ha

It should have a mild chocolate flavor.

I was wondering the same thing. glad you asked. I made Sarah's Red Velvet and it was good. I also wondered about it having the chocolaty flavor. I also made the one from womans day magazine which is very similar in ingredients but asked for 1/4 cup of cocoa powder. Wow i could definitely taste more of the cocoa but now overpowering at all it was good too.
But i still wonder....

Red velvet is not chocolate, that I know of.

It's a red...cake...

My recipe calls for 2 ts of cocoa, I think, and customers who tell me they "know RV" LOVE it.

I ate a piece last night and it was ok. I didn't go back for seconds unlike usual. icon_redface.gif One piece was enough (maybe that's a good cake for me..ha). A different kind of taste for sure. I am thinking of trying another recipe this time with more cocoa. Of course I do not know anything of RV so I have no comparison.

According to the Cake Mix Doctor, red velvet is a mild chocolate cake colored red (I love that book and I read it like a novel). I made the RV cake in her book today, which starts with a german chocolate mix.
