I am making a cupcake cake for my family Easter brunch and want to do a FBCT. How far ahead can I make the transfer? How long is it okay to stay in the freezer?

Oh - you could definitely do it even today and keep it until Easter. I'm not sure what the max would be but I know that some people freeze buttercream for months and it is fine.

I would say that it would be fine for the time frame you are talking about. But if you were to say make it now for Mother's Day then I would be really iffy.

I've kept them in their for a few weeks..........you're good to go......the only issue is making sure it doesn't pick up flavors from the freezer.....buttercream is really good for that! yuck!!
