Buttercream Dream????

Ok - I just made Buttercream Dream for the first time and it tastes great. However, I usually make an all shortening buttercream so I don't have to worry about temp and putting the cake in the fridge.

My question is do I have to refridgerate the cakes after they are iced? It is in the 60s here and no humidity. Will the icing be OK with the butter and milk or will it spoil no matter what the temp is?

Help!

I also made buttercream dream recently and I did not refrigerate it. I made it the day before and just put it downstairs (covered up in a cake box of course) in our basement where its about 60 degrees.... It tasted so good. My husband LOVED IT!

It does not need to be refridgerated.

because of the high sugar to butter ratio it can stay out for 2-3 days. I usually put the extras (if I don't have another cake to do soon) in the freezer. Just re-whip and it will be fine. Or you can put it in the fridge for a little bit.
