I'm making a groom's cake (my first!) for a wedding in a couple of weeks. I need a good chocolate cake, and would prefer a doctored cake mix. Any tips? Thanks!

IMHO, you can't beat the Darn Good Chocolate cake. I always leave the chocolate chips out, though. The recipe is here in the recipe section.

I was just wondering that same question, but went ahead and did my old standby which I don't love. Cake is already in the oven, so it is too late. But next time I'll try the Darn Good Choc cake.

Thanks.

I don't use boxed mixes, but Toba Garrett's Chocolate Fudge Cake has caused many of my customers to groan in ecstasy when eating it! It is also one of the simplest recipes I've ever made - you just shove everything in the mixer at once and beat until smooth - then add some melted chocolate and you're done. Have the courage to try this scratch recipe - you will not regret it - this cake is very moist and to die for icon_smile.gif!

Here's the recipe:

I forgot to add a tip - if you're going to torte this cake - wrap it in saran wrap and let it sit overnight in the fridge - it will be far easier to handle then!

I'm not sure I can be much help to you as far as brand names go (I live in Europe), but I use a chocolate that has at least 50% cocoa solids (in my case Callebeut dark chocolate drops - I buy them in a 2.5kg bag from my bakery wholesaler).

You should try my "Most Excellent Chocolate Cake" on here in the recipe forums. It's scratch, but it's just about as easy as a mix AND IT'S REALLY, REALLY GOOD! Try it and let me know what you think (well, I'm SURE you'll love it, so try it and tell me HOW MUCH you love it!).
