Hi, I've been asked to make my DH's cousin's wedding cake for this June, it will be their wedding gift. I had made her sister's 3 years back, for their wedding. Anyhow, since I only do this as a rare hobby, I want to get a jump start on the details so I can have all the available supplies and time to plan. My DH says since it's a freebie, I shouldn't be the one running around after her to get the details, she should come to me. All I know from the Mother is that it's in June and the guest list was around 400. So what I'm asking is, how far in advance do you all like to have everything ironed out for a big cake? I actually would have liked to had a meeting w/her months ago, but maybe thats just me. Any thoughts?
Thanks

Hi - I like to have the basics sorted out as far in advance as possible. I am also a hobby decorator so I need time to purchase supplies and learn any new techniques that I need to. I got most of my answers back in December for the cake I am doing in May. There are still small details to be worked out but all of the major design planning and color choices are done.
I would definately contact her and say that if she wants a cake from you she needs to tell you what she wants within the next 2 weeks.
JMHO.

Unfortunately - it is up to us to chase people down sometimes - otherwise we wouldn't be happy with the job we did! People really don't understand how much time and effort goes into decorating a cake and often think a couple days notice should be plenty!LOL!

I need things locked down by 3 weeks prior .... design, menu, headcount, etc.

I also prefer 3-4 weeks out if not more for a large order, if its a large one like a wedding cake etc, I like a week or 2 to play around with the design in my head and make sketches, sleep on it, get opionions. Also take this time to buy ingred, especially if I am gifting it an it is out of pocket. The last two weeks I need to get baking, make any fondant embellishments, make my BC or fondant that last week so that all I have to do those last day or 2 is decorate. Its no longer fun for me to do if I have crammed everything to the last minute.
