Does the lemon filling that you buy in the sleeve have to be refrigerated once you place it in the middle of a cake? Thanks for your help!

Then I would treat it as a home made curd and be safe rather than sorry. Refrigerate.

no. It is shelf-stable for 5 days...

Here's what my local cake shop told me:

unopend, 6 mo. on shelf
opened, 2 weeks in fridge
in cake, 5 days, unrefrigerated...

Hi! I contacted the company that manufactures the lemon filling in the sleeve and I was told that once you open the package, they recommend that you store the unused filling in the refrigerator; however, it is fine to leave out and not refrigerate for a few days when placed in the middle of a cake.
