What To Do When I Can't Get Sides Of Cake Smooth

Sometimes the sides come just beautiful and then sometimes the more I try, the worse it is.
What do you do to "disguise" the ugliness?

Viva method or Melvira Method. Do a search on CC and tutorials for both will come up. You'll always have smooth icing with these.

I've found that if I use the big icer tip to put the frosting on the sides, it goes on thicker than if I just use a spatula. Then I use a bench scraper to smooth out the sides. That takes off any excess frosting and gives it a very even look. Finally, I use the Viva paper towel to smooth everything and that does the trick.

When I use my big tip the frosting pulls away from the cake, it just kind of falls off. Any idea why?

That happens to me sometimes too and I think it's because my frosting it too stiff. So I just add some water to the buttercream to thin it out and it does the trick just great.

LOL the first thing I thought was basketweave. Okay not going to get you a smooth finish but it will definately hide any flaws. icon_razz.gificon_lol.gificon_razz.gif
