I use Satin Ice or FondX- depending on where you get it, they aren't any more expensive than Wilton. That being said, I started out with Wilton (back in the days before I knew better, LOL)- and I think Satin Ice and FondX are both easier to work with than Wilton. I don't think that using (and learning with) Wilton did me any disservice. If you can get Wilton easily, then I would just practice with that. You can always use the discount coupons to Michaels, Hobby Lobby, JoAnn's, or whatever store is closest to you to purchase it so it's even cheaper!

I've used both ... I find the Wiltons better to work with ... I like the fact that it gives the cake a satin finished look.....the taste is HORRIBLE!!!
the MMF is better tasting .. you have to get the hang of it when working with it ... the one thing I'm not thrilled about is the sheen it has to it .. it also doesn't look as smooth as the wilton

you can mix the two types of fondant ... I've read on this forum that you can mix mmf with gum paste or powdered fixodent to make it easier to work with for modeling .. I haven't tried that myself yet
