I am very new to the cake decorating hobby and was curious as to everyone's personal favorites. What are the pros and cons of buttercream versus fondant. I have never practice with any fondant cakes yet and am curious which is easier, taste better, looks better?

I like using crusting buttercream when I am doing a cake that will be difficult to cover with fondant and the French buttercream recipe off of the Food Network site by I believe it's Duff on any of the other regularly iced cakes. I don't do very well working with fondant when covering cakes because I can't make my fondant as stretchy as it needs to be to get smooth finish, but I do use it for decorating cakes and for adding embelishments. I use the marshmellow fondant recipe on this site for that. Fondant looks neater and more sleek but most people are weary of it because of the texture. I guess it really depends on what you like to use and what people request when it comes to choosing which medium you prefer to use in decorating cakes.

it is a matter of what look you are trying to achieve. Generally speaking more people like the taste of buttercream but that is generally because they have not tried one of the many delicious fondants available.

I alwasy determine what I use based on how I want the cake to look.

Most of the time fondant has a more formal appearance but you can certainly make it casual and like wise dress up buttercream.
