A customer has asked for lemon cake with a lemon pudding filling! I have no idea what to do? She told me that she didn't like the instant kind of pudding but to use the regular kind. I am so confused, has anyone used pudding before? I imagine a nice soggy mess... HELP!!! TIA!!!

I haven't made it in a long time. It's in the same isle as the instant. It's pretty easy, and it tastes more like a custard. It should be thick enough. Check the box and see if there are different directions for a pie consistency.

I have used pudding for filling several times. Use the directions for the pie filling. It uses less milk and comes out thicker. I have never had a problem with the cake being soggy.

I usually fold the pudding into some whipped cream for my fillings. It is thicker and has a really light taste!

I always use the pie filling pudding it's a family favourite and its great. When I'm not rushed I also make my own lemon curd it's much creamier and smoother than the box stuff and very easy to make.

You can also use canned lemon pie filling.
