Any Pineapple Jams/jelly

Has anyone used pineapple jams/jelly as a filling for cake or cupcakes. I'm dreading making the filling because I've tried with strawberries and it just didn't come out right.

any ideas for pineapple ? i was going to Celebrate cakes but they're out.

I had a cake once that used lemon curd with crushed pineapple mixed in it as a filling and it was really good........I never would have guessed it was lemon curd though....I thought it was straight up pineapple!!

There is a pineapple filling on this site and it is easy and really really good. Just go to recipes and look under fillings. icon_smile.gif

I use pineapple preserves with a little buttercream and really well drained crushed pineapple mixed in. A small jar goes a long way!
