12 X 18 Sheet Cakes - One Layer Or Two? Need Advice Quick!

Hello:

Its been a really long time since I've posted here - life has certainly gotten in the way!

I have a question -- I have to make 2 12 x 18" cakes for a skating cast party this weekend. And I was thinking, should I make them one layer and then just decorate them? Or is it more accepted that it should be two layers with filling?

These are being donated, not paid for, and I have been granted "creative freedom". They are just happy that they don't have to pay for it from a grocery store.

What would you do? Please advise! I have to start baking tonight!!

If they're free, I'd probably do one 2" layer and ice it. Save yourself time and $.

For my wedding sheet cakes I do two full layers and fill them and stack, but for a freebie, I wouldn't bother.

How many people? If it's under 50, I'd do one single layer. Otherwise, the double layer will be less work.

A 12x18 takes so long to bake and then cool. I only have one pan so to make multiple layers YUCK! Just tort and stick with the one layer.

Here is a stupid suggestion, I understand that Sams Club will sell you anything in their bakery including the cake blanks! Maybe you could buy some of the cake already made and then put your efforts into the decoration. I keep meaning to check this out since I like the taste of the warehouse cake and I hate making sheetcakes...........

I was thinking of doing two cakes, one white cake, one chocolate.

Its gonna be a big party. There are 150 kids in the show, and they offered a free ticket to each kid, plus are selling up to 250 others. I have written to the organizers to see how many ppl will be in attendance, but they haven't written back yet.

I guess last year, they got a grocery store sheet cake, and in the words of one organizer "when it was gone, it was gone". So I don't think I have to provide enough to feed EVERYONE! (they also asks parents to bring desserts).

I guess i'm trying to figure out if I should torte and fill the cakes? Make them 2 layers each? OR just make the single layers and frost simple?
