I'm just catching up on the posts from the last couple of days...so I'm a little late but I wanted to put my two cents in. I've used BC that had been in the fridge for 3 weeks and it tasted just fine and had no problems. It was the Class BC for the wilton classes so it had no butter or eggs. HTH!

Wilton says their class buttercream (water/crisco) is good on the counter for several weeks. I've kept it in the fridge for a few months with out problems. You can also freeze it. ![]()
