but can you freeze an iced cake?????

Yes, depending. Some fillings will not freeze well, so you will have to consider that.

Put the cake in a cake box, wrap it several times with foil or plastic wrap and freeze. When thawing leave the wrap around the box, so that the condesation will form on the outside of the box, rather than on the cake.

It's a lot like what you do with an anniversary cake (from the top of your wedding cake). When we thawed ours it tasted great! We were both shocked! icon_razz.gif

what kind of filling (other than buttercream) do you think would freez well inside an iced cake?

No do not freeze fondant take it from me I tried it and it doesn't work. When I defrosted it it ran with the mosture from freezing . It was a mess. I saved the cake but had to work on it. I will never do that again. icon_cry.gificon_cry.gificon_cry.gif
