How long can you keep a finished caked refrigerated? Can you freeze a finished cake? If the answer is yes, then can you freeze/refrigerate it if it is covered with fondant?

My daughter's baby shower was this past weekend. I baked, iced and decorated the cake on Thursday. It sat in the refrigerator until Saturday. I brought a couple of slices home and put them in a Ziploc bag in the refrigerator. Ate one today (Wed .... 4 days after the shower, 7 days after it was baked) and even I was impressed on how great it tasted! Moist and fresh!

Sometimes I just amaze myself! icon_lol.gificon_lol.gificon_lol.gif
