Tropical Suggestions?

I'm doing a cake for a baby luau for my friend's shower.
I wanted to do one tier in something with coconut. Any suggestions?
I have the cake mix doctor book, so I can look something up, but I'd like to know if anyone has tried anything yummy!

What about a coconut cake mix? You can doctor it with the extra egg and a box of coconut pudding and can even add in some flaked coconut. I also want to say that I have seen posts about using coconut milk as well. So you may want to try the search feature.

Pineapple is good with coconut so if you are looking for a filling you can use it. icon_smile.gif

Coconut cake mixed with crushed pineapple and brushed with simple syrup spiked with rum. umm yum

That last suggestion sounds yummy. Maybe while my DH is out of the country on business I will make that one for my kids. He does not like coconut.
