I have been ask to make a cacke for passover. I have never baked kosher food before. Does anyone know where to start. The request is spice cake with apple filling. I will be doing mini cakes covered in fondant (MMF) Please help!!!!

I just bumped a link with Passover recipes.
Are the people really observant? If so, then most marshmallows are not kosher, so that could pose a problem as well. Even if things are Kosher, everything has to be specifically marked kosher for Passover, if they are quite observant.

You might want to try a few. I know that some of the cakes i've made with matzo meal (can't use flour of course) wouldn't do well with fondant at all. Too crumbly.

The MMF is really going to be a problem. Powdered sugar contains cornstarch & corn is a no-no on Passover. You really need to ask your customer how observant they are. Passover observance is pretty complicated & depends on a ton of factors (including where your ancestors are from!)

In general, for a Passover spice cake, try: http://www.jewish-food.org/recipes/pascak56.htm (I've never made it, but it is an example of how Passover cakes are generally structured.) Apple filling shouldn't be too bad, just remember no corn, wheat, soy, etc. products (i.e., corn syrup, corn starch). I'd be happy to review any recipes for you, if you'd like.

As an aside, I'm baking chocolate tortes for Passover this year & had a horrible fear that I wouldn't be able to find decent chocolate without soy lecithin (an emulsifier). Thank heavens for Nestle's new Chocolatier line - they really saved my skin.
