Mmf / Buttercream Or Royal Icing
Decorating By sofiasmami Updated 15 Mar 2006 , 9:09pm by sofiasmami
when I took the wilton course our instructor was very persistant that we should only use royal icing for accents (borders....ect) ... my friend and I find that buttercream works better ... I'm wondering if the buttercream worked better because we work with MMF not Wilton...
the instructor said that buttercream would breakdown the fondant ... if this is true how long would it take for this to happen?
I think I am confused, but i would like to know the answer....
You are putting the royal on the mmf not under right? i am sure royal would never go under ...
But did the instructor say what would cause the fondant to break down?
That really could not be true "I think" because the books all say (including wilton) to put buttercream under as a crumb coat the add fondant. So if it can go under....seems it could go on as well right?
Not much help I guess.. but it is a start! ![]()

I would use buttercream! Especially if you are going to eat it! I agree if it can go under why not on top! Either fondant, it shouldn't matter Wilton or MMF. Royal icing has its purpose, gingerbread houses, sugar eggs, flowers, dummy cakes etc, but not great for eating or for borders. It gets hard..... Yes I would do buttercream.
Eventually (keyword here) the grease in the buttercream will break down the royal icing but this does not mean within 24 hours or anything. Same with fondant. The moisture in the bc will eventually make the fondant/MMF slimy but it doesn't happen instantaneously. I had MMF covering a cake 24 hours before I gave it to the customer and it was just fine. Same thing with a cake I recently did with bc and royal icing flowers.
I always do that !!! confuse people
... I would be putting buttercream under fondant .... my question is about the decorations .. the instructor said it should only be royal ...
acookieobsession .... you make a valid point .. if it can go under why not on top?? .... I'll do buttercream since I'm more comfortable with that ... thanks ![]()
