Filling cupcakes with pineapple but don't have a recipe. I found the recipe here but noticed it didn't get high reviews.

Any recipes out there

We just did our 1st wedding cake with pineapple buttercream filling, and it was FANTASTIC! We added a little bit of pineapple filling, one of the ones that you buy in a plastic sleeve, to some regular buttercream. Evidently the sleeved fillings are very highly flavored. Mixing it with the buttercream caused it to be very creamy and aromatic, and the taste was heavenly! The thought of this filling in cupcakes is making my mouth water! icon_biggrin.gif

Pineapple filling in a plastic sleeve ???? Haven't seen that one, where can I get it ?

We get ours at a local cake supply shop - www.cakecraftshoppe.com - but I'm sure there are plenty of others. You might try to google for cake fillings. They are very inexpensive - less than $4 each. We did a double wedding cake and didn't even use 1/4 of the bag, maybe even less. Also, you might want to do a search on the forums here for previous threads about the sleeve fillings, I'm pretty sure I've seen some recently. Let me know if I can help you further!

Ok, I just did a search and found a reference to ladycakes.com - according to the posts that seems to be where some people order the filling sleeves also. Good luck!
