Imbc - Which One? Beranbaum Cake Bible Or Sylvia Weinstock?

Recipes are a little different, I have both.

I never made IMBC before and I'm about to try now.

Which one should I use??????? (For taste, piping roses, etc.)

Personally, my favorite is from "Wedding Cakes You Can Make" by Dede Wilson. Her book has great tips and lots of wonderful information. She describes the process of making IMBC perfectly and I had no trouble following it.

I've only used the Cake Bible IMBC recipe, but my best advice regardless of recipe is MIX ON! At some point, it will look like a curdled mess that will never be a delicious, beautiful icing, but keep going, add the butter slowly, and have faith. It's never failed me, and it's soooo good!

I ended up going with Dede Wilson's recipe as suggested above.

I happened to have taken that book out of the library as well so I gave it a try.

I have not put it on the cake yet (tomorrow) but it sure tastes good with a spoon! thumbs_up.gif
