I've made the crusting and the reg.....I looooooove this icing!! It tastes wonderful!!! But I couldn't for the life of me make roses and barely a border with it!! It gets soft so fast!


Any ideas?

Hi Twinsline7
I love cream cheese frosting (yum thumbs_up.gif ) Decorating is a challenge with this frosting. I made a carrot cake and encountered the same problems. I did all the decorating (boaders, flowers and such) in buttercream. Perhaps more powder sugar?

The most I have ever been able to do with cream cheese is shell borders. I too think that experimenting with more powdered sugar to stiffin it may work, but that would be very sweet. Hmmmmmm...... what to do, what to do........ icon_rolleyes.gif If anyone figures it out, there are a bunch of us who would like to know!

I thought about more pwder sugar ....but my cousin was just telling me about maybe keeping some ice near by or not filling my bag as much so it doesn't melt so fast!! It does really well when its cold.....I wish I could find a better way to work with it because I LOVE it!!!

gee, too bad someone couldn't invent gloves we could wear that would keep the icing from getting warm from our hands.....or maybe insulated pipiing bags flexible enough to use for decorating!

I decorate a ton with cream cheese icing never have problems.

This is the recipe I developed:

With Whisk attachment, cream together:
1 8 oz pkg Cream cheese, softened
1/2 Cup butter, softened

Add:
2 tsp vanilla
1-2 Tbsp Milk

Then add:
32 oz pkg pwdr sugar (8cups)

Mix on Med speed until incorporated. Scrape bowl, and add milk
a little at a time until you acheive the consistency you desire.

for Chocolate, Add 2/3 c. Baking Cocoa

Super easy and tasty. This does crust.

Leta, are you able to do decorations with this, especially roses, drop flowers, shells, etc...?

Geez, I don't know when I last piped a rose, now that I do a lot of gumpaste and fondant. I recently did a cake with lillies of the valley using this icing. Of course the borders you can do for sure. Leaves are no prob and grass.

I'll whip some up and try it and get back to ya.

I pipe roses and flowers with mine. Just make sure you use the paddle to incorporate the p sugar. Also if you add 3 tbls meringue powder, it will help stiffen it.

Yes, I piped roses with it. The miracle is that I remember how. I guess it's all those years decorating ice cream cakes at Baskin Robbins.

I tried to attach a pic of the roses, but the file is too big and I don't know how to decrease the size.

I used 2 Tbsp milk, but you can start with less.

The meringue pwder is a great idea. I don't know if it will affect the flavor.

I'm going to try this this weekend!! I love the cream cheese icing so much...the recipe I used I could use the grass tip to save my life!!! too soft.......but hopefully this will work! !!

I use the crusting cream cheese recipe from here and don't have a problem decorating with it but the big thing I noticed with this recipe is everything has to be completely at room temp or it doesn't behave. I haven't tried to make roses with it but I've been able to do everything else I wanted to.

Just add more powdered sugar. Not as creamy but works for decorating to a point! Still tastes like the same icing just not as creamy. I use the regular for frosting and more sugar for borders, etc. or use regular for decorating and cream cheese for frosting.

can this frosting be used underneath fondant?? ... I have cheesecake flavored lorran oil I've been wanting to try on my mmf .. maybe it would be a good combo
