How Long Before Batter Gets Baked?

I only have one pan of each size ...... when I want to make two I borrow from a friend of mine ..but she is moving soon icon_cry.gificon_cry.gif we won't have the luxury of exchanging pans anymore ... my question is once I mix batter can I wait to bake it ? can I refrigerate it? or do I leave it room temperature ?

i would refridgerate the batter, the only problem you may have is the second batch may not rise as much as the first.

I have refrigerated cake batter many times--let it sit a short bit before pouring into pan. Haven't had a problem. A while back, I was told to let the cake batter rest a few minutes in the pan when making cupcakes and they rise more.

I have mixed batter in the AM and used it in the evening around 4:00. HTH--Pam
