How far ahead have you baked items? Would a month be too long to keep cupcakes in the freezer? Thanks.

I usually end up with lots of cupcakes and small cakes in my freezer (leftover batter from other projects). If you wrap them up real good, cakes stay fresh for much longer than 1 month. Three months is the longest I think I've kept a cake in the freezer, and it was still very tasty. Some people even think that freezing the cake makes it moister. I wrap everything in two layers of plastic wrap, then slip it into a ziplock with the air sucked out with a straw.

Good to know. I freeze layer cakes all the time but haven't tried cupcakes.
