Need Help Asap, Icing Question

So what do you do when you have someone who doesn't like buttercream? I am needing to do a 3D cake of a cuppa coffee and the man doesn't like buttercream... what the heck should I use? I know how to decorate cakes in BC..... and I use other frostings on my specialty cakes, but never done a cake without some form of BC be it plain or Chocolate... any suggestions? This is for tommorow! 3/28

Can you find out what he doesn't like about BC? A wilton, Walmart or Supermarket BC can be so different than a real French or Italian BC. I hate the icings that use 10X sugar and try to avoid them as much as possible. Most people are surprised by the richness and lack of sweetness of a real BC.

On the other hand, why not a ganache or chocolate clay covering for his cake.

Dont use butter or butter flavor in your icing. try using a differnt flavor like almond maybe he will like that.

You could use a stabilized whipped cream or Pastry Pride or Rich's Bettercream. I'll be doing the same kind of cake in the next couple of weeks, and I'll be using Pastry Pride. Good luck!

Well does he have to eat the buttercream? Plenty of people just dont eat the buttercream if they dont like it. It's like mom always says "just pick it off if you dont like it!"

I have alway use the recipe that uses crisco, 10x sugar, water and favoring of my choice. Vanilla, almond, or lemon. This is the recipe I've learned when I took classes years ago and I have never had anyone not like it. Anyway that my thoughts. icon_wink.gif

Agree with all that's been recommended.

Especially Kayakado's suggestion to ask what he doesn't like about b/c.

If it's that's greasy Crisco mouth feel, a hi-ratio b/c would work nicely.

Thanks everyone for replying..... I asked the question, what about BC doesn't he like, but his wife couldn't tell me... I told her about the all crisco recipe and she didn't sound too enthuzed... so she just told me to use a flavor other than butter, which I will do. Thanks everyone.. will post a pic when done!
