I'm going to be doing my nieces 8th grade graduation cake. She said she wanted a Strawberry cake with Cream filling. What is the best way to do the strawberry cake so its a little denser. I have read several posts where people say that the Strawberry cake is very good, but hard to work with. It will be part of a topsy turvey cake, I plan on doing it with the nesting layers. Since this will be my first one. I want to make one before hand so that I know what to expect. Any one have any ideas??
i made a strawberry cake for my nieces birthday just a couple weeks ago. it was sculpted into a pillow and covered in fondant, and held up really well. i just used a pillsbury cake mix and added the "enhanced cake formula" extender recipe from this site. includes flour, sugar, sour cream, butter. let me know if you can't find it and i'll get it to you. you can see my pics if you want to see how i carved the cake, its the large pink pillow.
ps, i also froze my cake before sculpting, i don't think it would have done nearly as well if i hadn't. but even after thawing it was durable enough to support the fondant.
I actually made a strawberry cake this weekend that was really good. I used a dh yellow cake mix and the same "enhanced cake" recipe (flour, sugar, sour cream, butter) I also added a packet of strawberry jellow and instead of water I used canned strawberry juice (got it from the international food isle in my regular grocery store. Turned out really nice. As stated below, freexing the cake before caring is the best bet. Hope this helps!
