I'm trying to determine which is best for me, coloring MMF ahead of time to make figures or making the figres out of white MMF and painting it.
I tend ot overwork the fondant when kneading the colors in, so it's leathery and the colors are usually too intense. I geneally like the results of painting, but there are some problems in terms of running colors and making the fondant gummy. Any tips for painting fondant?

If you are looking for multiple colors of MMF I would make a small batch and color the whole batch one color right after you melt the marshmellows but before you add the powdered sugar. It is a lot easier to add the color (expecially with dark colors) and harder to over kneed the mmf.
However with making your figures all one color if you need to scrap part of the figure half way through or at the end b/c you aren't happy with it you don't have to worry about mixed colors.
So I guess it is all a personal preference and how much time you are planning on putting into them.
here is a small batch recipe that I use for MMF
1 C mini marshmallows
1 T. water
1 1/2- 1 3/4 C powdered Sugar
Place marshmallos in a standard 1 cup measuring cup and push down and pack them in. Place in a microwave safe bowl and add the water. Put in the microwave for about 20 second. Just long enough for them to soften and puff up. Take out and stir with a spoon until it is combined well. At this point it looks kind of soupy. Add your color until desired color (adding powdered sugar will not alter your color it will just absorb the color) Then add the sugar and mix and fold until all is incorporated and it is no longer sticky. Take it out of the bowl when it gets to the point where most of the sugar is incorporated and knead it in your hands. This takes roughly 5-7 minutes. Roll out as needed with a lightly greased surface and rolling pin (this works best for me instead of cornstarch or powdered sugar surface)
