Do You Doctor Your Mix For Cupcakes Too ?

I usually do doctor up my mix to make cupcakes, by using milk instead of water, butter instead of oil, an extra egg, and a small box of instant pudding. Last night while making cupckaes for my daughter to bring to school I decided to try it without adding the extra egg or the pudding mix. They came out much firmer and more even than when I doctor them. When I doctor them they taste great of course but sometimes they almost seem too moist and not very firm in the liner. SoI was wondering what everyone else does ?

Yes, I do the same thing. I have the CupCake Doctor book but have not tried to do any of them yet. Cupcakes are new best friend now.

I use the same recipe I use for my cakes. They turn out very good, moist..I just cut the baking time.

I doctor the same way (except I still use the oil) and yes, I do the same thing for my cupcakes. They are more moist and less firm than using the regular recipe but I like them more moist - especially because cupcakes dry out more quickly than a whole frosted cake. icon_smile.gif
