I'm getting up the nerve to make my first batch; I've already bought the marshmallow. How long does it keep once made? Do I have to use it all right away? If it will keep, how should I store it?
store it in an airtight container. i wrap mine in saran wrap, then put it in a large ziploc bag with all the air pressed out. you can keep it on the counter, doesn't have to go in the fridge, and it will definitely keep for a month. i think i've seen posts where people have kept it longer, but i've never used it past 30 days. good luck!! i think its super easy to make and work with.
one more thing, when you want to use it again after storing it, make sure you put it in the microwave for a few seconds to soften it up again. otherwise it will be too hard to use. and then knead it for a bit to make it nice and pliable. depending on how much you're heating up it should go in the microwave for 5-20 seconds. check it frequently as sugar heats quickly. i check mine every 5 seconds.
