What Happened To My Buttercream Dream??

1st batch of buttercream dream, OMG it tasted sooooo good! no wonder it's called dream!! It just melts in your mouth! wonderful!!

The consistency in the bowl was perfect, and the texture was fine. Not grainy at all. but when i mixed the color.... thumbsdown.gif wth happend??? It's like the color didn't mix all the way and was all icky looking. The red and the black were the worst, obviously because they were so dark.

This also happens to me with the red and black colors. I love buttercream dream but now only tint with certain colors because of the whole seperating look that happens sometimes with the vivid or dark colors. With those I usually make a half batch of a different kind up like the wilton BC recipe and use that only for those colors. I'm interested too on this one!

that's happened to me too. i usually just squish it a little in the piping bag and it turns out fine. it doesn't really change the taste, so i never let it bother me.

your cake looks great! my 18 mo boys love cars, they run around the room, yelling 'vroom vroom!' when i put it on! ha ha

I add 1 T of meringue powder to every pound of powdered sugar to all my BC recipes, including this one; it's a great stabilizer. If you can't use, or don't have MP, use cornstarch.

I am really new at cake decorating and I have made 2 batches of the BCdream now and that same thing has happened to me when I color it. I am thinking it is because the BC is starting to melt from the heat of my hands and thats why it appears to be seperating(mine looks just like your in the bag). What I did the last time was to mix my color up and put it into the fridge to harden back up a little bit, like 15 min or so, and then it didn't start to seperate as fast and then once it started to melt again I put it back into the fridge a few minutes and then I was able to mix it up in the bag and it looked better. Maybe I am wrong but this seems to be working for me. HTH

I could be wrong, especially since I don't know what is in the buttercream dream vs buttercream, but I was told not to use almond extract in the frosting when you are going to color it bold colors--read, black, blue, etc. I believe it was because the almond breaks it down or something...

I don't know, just a thought.

didn't use almond extract, so i don't think that was it.
