Need Help. Have You Sold To Restaurants????

Ok. I think I have a huge opportunity in front of me. A new restaurant is just starting renovation tomorrow. Very busy part of Cedar Falls, IA. The owner is looking for outside people to provide the food. no inside food prep. Has anyone sold in this type of situation before? I'm going to call him so I can see the location and meet with him. How did you work out price, etc? any advice or words of wisdom are much appreciated.
I sell my dessert cake to 2 different restaurants in our town. These restaurants do not do any desserts but do prepare the rest of their food. I'm not quite sure your situation with them not preparing the food in their restaurant and wanting it prepared all from outside?
I do not give much of a break in price to the restaurants because they will turn around and sell my products for three times as much as I charge them. In my area I also have to carry a liability insurance that protects me from being sued in case of someone getting sick, by what they might think is my dessert. (I have never figured out exactly how they can tell that a sickness could come from one specific food) The restaurants also require me to have insurance and a state license to sell to them.

sheila06-thanks so much for the info. I wondered about a price break, because they will turn around and sell my cheesecake for 3 to $4 a slice! My insurance just started today and am waiting for my catering license. Already paid, just need to meet with the inspector.
