any one have a recipe carrot cake recipe that is diabetic friendly?

i'm curious too! my in laws are coming this weekend and my FIL is a diabetic so it would be nice to make him a cake he can enjoy...BUMP!

I've never tried this (for decorating) but here's one from SWEET AND SUGARFREE by Karen E. Barkie, 1982:

PINEAPPLE CARROT CAKE
Cake:
3 large eggs
1/2 cup butter, softened
1 cup unsweetened pineapple juice
2-1/2 cups unbleached white flour
1 teaspoon baking soda
2 teaspoons baking powder
1 teaspoon nutmeg
1 teaspoon cinnamon
3 cups grated fresh carrot

Topping:
1 cup crushed pineapple, well drained
1 teaspoon cinnamon

Beat together eggs, butter, & pineapple juice. Add dry ingredients, except the carrots & beat well. Stir in carrot & mix well. Spread batter evently in an oiled & floured 9 x 13 x 2 in. pan. Toss topping ingred. together & sprinke over batter. Bake at 350 degrees F. 25-30 min. or until browned. Cool on a wire rack.

NOTE: You could probably make it without the topping if you wanted to decorate it. Is there such a thing as diabetic icing?
