I offered to make the simple wedding cake for a friends daughter as a gift. 2 tiers 2 sheet cakes. Now she has decided to have individual cakes on each table. That comes to 25 8" rounds. How in the world am I going to do all of the baking? I only have a small freezer and it's almost full. Any suggestions will be greatly appreciated.
Forgive me for being crass but you offered to do the wedding cake...not 25 individual cakes. I think this is taking advantage of you BIG TIME and I would not be happy if a friend did this. Those cakes would cost at least $25 a piece so your generous offer has now turned into a stressful $500 gift.
Ouch=( The only thing I can think of is to bake all your cakes plenty ahead of time and freeze them. Make your icing/fondant a couple days ahead(and any decorations you might be adding). Then take your cakes out and defrost them. I usually take them out the night before I will frost them. Then take the whole day to decorate?? That is a toughy without having a lot of freezer space. Hopefully someone here might have better suggestions for you. OHHH do you have family/friends/neighbors that you could borrow freezer space from?? That might help too=) I wish you all the luck on your cakes! Jen
I would simply tell her that if that's the way she wants to go, then thats fine, but you simply don't have the space to make or store that many cakes. Let her know that if she wants to go that route you won't be offended if she goes to someone else (if she's trying to take advantage, she will change her mind pretty quick! But if that is what she really wants - and can afford! - then she will go elsewhere!)

i would tell her you would love to help, but you have to stick to the original agreement, 2 tiers, and 2 sheet cakes. if she wants more, you'll have to charge for the individual cakes, but you will still do the tiered cake as a gift, as you agreed. that is a LOT of free cake, and a LOT of work.
I agree with the other posts. You told her that you would do the two tier two sheet cakes for her wedding. Individual cakes for each table that is hard work. How would you transport those?
Tell her since you don't have enough space you will have to stick to what you said you would do in the begining.
If she wants more then you will have to charge her for the price you will have to pay extra to rent a freezer and buy extra supplies for so many cakes.
Or she could always have someone else do the cakes for each table. Bet that will change her mind about what she really wants when she will have to pay. ![]()
