Can Anyone Tell Me Why My Clear Vanilla Turned Yellow?

.... my clear vanilla has gone yellow?? I keep it well sealed, in a plastic bag (so it wont leak), and it stays in my closet when I'm not using it. I'm a little confussled on this....
