Need Help: First Time Making A Cupcake Cake

Hi everyone,

I have an order to make a cupcake cake, but have never made one before. I have gone through pictures to get some ideas, but have a couple of questions.

Does anyone have any tips on how to keep the frosting from dipping down into the cracks inbetween the cupcakes? Are the cupcakes joined together by dowels so they don't slide apart? What is the best way to transport? My main worry is that the cupcakes will slid apart.

The icing doesn't really fall into the gaps because the cupcakes are so close together. I usually put a small dot of icing on the bottom of the cupcakes to prevent them from sliding around. To transport them, I use a cake box.

I did my first one last week and it was easier then I expected. My icing was medium consistency buttercream. I used the same large tip shown in the demo and spread it out, and it worked great.

I have never had any problems with the cupcakes sliding apart -I have "glued" down the outside ones with icing on the bottom.

I usually make my buttercream a bit on the thick side for the inital layer of icing over the top. Lay the icing down in rows using that big icing tip (gosh the correct name escapes me!) Then add icing where you need it to make it all even. I have never had problems with icing in the gaps..

One problem I did have was in transport if you board is not sturdy enough it can bend and cause your icing to crack between your cupcakes. So make sure your base is solid.

The below picture is how I usually do my cupcake cakes. You want to arrange the cupcakes so that there are few and small gaps between. I also use the dab of icing to glue them down and have not had a problem with them shifting around on the boards after they are done. Infact anytime I do cupcakes I 'glue' them with icing to the board to keep them in place.
