Hi everybody, I'm having a really bad time with fondant!! I really enjoy my baking and decorating but lately I just can't seem to get along with fondant,I've had a really bad run of sticking, cracking and bad cake covering mistakes, uneven coverings basically everything that could has gone wrong. I usually use ready to roll white regalIce (i'm in the U.K.) and either colour it with paste colours and or paint /lustre dust it. I somehow manage to fix my ugly looking fondant with creative additions!! but I soon have some plain white wedding cakes to do and I'm worried I have lost my 'touch' .I'm actually feeling reallty bad about it!! icon_cry.gif and I have still got 4 birhday cakes to do this week icon_sad.gif Anyone cheer me up ?please??!!

I'm in the UK and also use regalice. Have you had any lessons on how to cover a cake with fondant? Are you using a smoother. My first two thoughts are maybe you're not crumb coating your cake thickly enough and maybe you're rolling out the fondant too thinly?

If it's cracking then it must be too dry - maybe you're rolling it out with too much icing sugar or not kneading enough before you start? You could try rolling it out with a little whitefat on your worktop instead of icing sugar?

hello emma thanks very much for your reply and advice icon_smile.gif - I do use quite a thick bc coat and i have started to roll fondant out a little thicker than i did maybe about 5mm , I think its just that recently I feel kind of clumsy with it if you know what I mean, like I don't have the confidence when handling it ! still, I guess you have to work your way through these things!! I did try rolling out with a little trex but I didn't feel comfortable with that either!! Back to the kitchen then!!
