the recipes for buttercream. I mostly use fondant for covering my cakes. On looking at all the recipes I am now a little more confused (confused at the best of times!). Crusting, Non crusting, crumb coat, filling, what do I use. I am making my grand daughter a barbie doll cake in a dolly varden tin and I want to fill layers and coat the outside before covering with fondant. What recipe should I use for the filling? I have copied off Buttercream Dream and a Creamy Buttercream from the recipe section and wonder if this is what I can use. Also the weight of a stick of butter please. Look forward to your neverending help.

buttercream dream will make a great filling. just add what ever flavor you want to compliment your cake flavor. then you can use the rest of it to put a thin coat of bc on the outside of your cake before you cover in fondant. not sure how much a stick of butter weighs, but its equivalent to 1/2 cup or 8 tbsp. hope that helps.

a stick of butter should weigh 4oz.

If you go by the "a pint's a pound" rule, I think a stick of butter ends up being about 4 oz. HTH

Just curious Briarview, but what do you normally cover your cakes with before applying the fondant? Always interested in what's used in different parts of the world!! icon_smile.gif

If it's a fruit cake I use apricot jam to adhere the almond layer and then sugar syrup for the next.
If it's a mudcake etc I use what is like a chocolate truffle\\ganache and can be white or chocolate and then apply the fondant.

A stick of butter is 4oz. or 125gms. Any buttercream icing/frosting you fancy can be put under fondant. For fillings you can use same or there are lots of lovely fillings on this site. My fav is a Raspberry or Passion fruit. (I live in Hawaii so passion fruit is available at little cost.)
