Best Buttercream Recipe For Viva/melvira Methods?
Baking By dtmc Updated 24 Mar 2007 , 4:26am by DelightsByE
Hi all,
I have been using the Wilton's class buttercream as my buttercream and I used to be able to get it smooth, now I can't. What is the best buttercream recipe for really smooth cakes? That fondant look. The paper towel method is great, but I still get tiny cracks in my bc, maybe because it is the Wilton recipe.
ANy tips would be great. I want to be able to do a wedding cake in bc and not have any cracks or unevenness.
THANKS!
I use the Buttercream Dream recipe from this site. It tastes good, and it crusts and smooths nicely. I am usuallly able to get it smooth with just my spatula.
I've used the Wilton Class BC with the Melvira method and it turned out AWESOME. As a matter of fact, the first cake I did with that method was a couple of weeks ago. A new client just called (she was at the party) and wondered how did I get my "fondant" so smooth. When I told her that the cake was covered in BC, she was floored!! ![]()
I used Reenie's crusting BC recipe from the CC recipe section w/ the Melvira method...worked great! I used it on the U of M cake in my photo's - I could definately see improvement!
Oh and a note, the Reenie's crusting BC prepared as instructed WILL NOT crust (but will be light and airy)...apparently a typo was made, it should read 2lbs confectioner sugar not 1lb.

I used it on my own bc last night and it worked great. I started out using a viva over the cake and rolling, then I took the viva off and rolled it even smoother. Boy, was I ever impressed! I've been using the viva method for quite a while and thought my cakes were fairly smoothe, but this is even better. I just need to get a handle for the longer rollers I bought. They don't fit with the handle I have.
Thanks Melvira!!!!

Well I suppose it MUST work, mustn't it, if it's on the home page!
