Best Way To Freeze A Cake?

I work full time and am a full time mom so as many of you know that doesn't leave much time for baking and decorating. I need to have about 3 cakes for this coming week, I am thinking about baking them this weekend and freezing them - to save time.

So what would be the best way to do so? Should I freeze them iced or uniced? What is the best way to keep them fresh, because I am all about freshness.

The way I was taught was not to frost it and then freeze it. Wrap the cake in saran wrap and then in foil that should protect it from any freezer burns. Let it come to room temp and then frost.

I always let the cakes cool completely after they come out of the oven. Then, I wrap the entire pan (I leave the cakes in their pans) in aluminum foil and stick them in the freezer. I know that some people use saran wrap, too, but I don't, and I've never had any issues with freezer burn. I usually take the cake out of the freezer about 10-15 minutes before I'm ready to ice it. By the time I ice it, it's slightly thawed, but still frozen enough to keep all of the crumbs from coming off when I ice it. Hope this helps! icon_smile.gif
