I made a chocolate ganache cake filled and iced with the whipped ganache. BUT....I want to do a ganache cake with the chocolate BC first then the layer of shiny ganache on top. My question is... will the chocolate ganache (runny) melt the BC??? Or do you set the cake in the fridge before you put the ganache on the BC? I see so many on here with the best looking cakes and the BC looks so light almost like the whipped ganache. If I can put the ganache over the bc is there a certain type of BC that works better?
TIA

I do this all the time for groom's cakes. Just let your crusting b/c set up. Also, let the ganache cool slightly. Do you want to cover the entire cake in ganache or do you want the sides to look as if the ganache is drizzled? Definitely let the ganache cool some and then just pour over b/c iced cake.
Thank you so much. I would like to just have the ganache cover the top and drizzle the sides. SO make sure the ganache isn't hot but it can still be a little warm? TIA
That's right, it just needs to be pourable. You can probably let it get to just about room temp as long as it's pourable.
