Chocolate Filling Recipe Needed...

I am searching for a chocolate filling for a white cake. I usually make mousse fillings for most of my cakes. I am making this cake for my sister to bring to work for co-worker b-days. She will be getting it on Saturday but won't need it until Monday. She specified white cake, chocolate filling but doesn't want to have to make sure it is refrigerated.
I like the fluffiness of the mousse filling. Is there anything like that that doesn't need refrig?

what is chocolate buttercream dream?


I just make cakes for family and friends so my collection of recipes is fairly small.

try a whipped chocolate ganache: it can stand out at cool room temp for up to two days

one 12 oz bag of good chocolate
one pint of heavy cream

bring cream to a boil (stir constantly) , remove from heat. place chocolate in a metal or glass bowl, pour cream on top. DONT stir for 2 minutes. then stir slowly until chocolate melts. allow to cool to room temp (covered with plastic touching the ganache). whip after an hour or so if using dark chocolate. if using milk chocolate (my personal favorite) you'll need to chill it several hours, THEN whip it up. frost and or fill right away, if you return it to the fridge , it will harden to a truffle (can still be used, but will need to come to room temp again before it can be spreadable.) consistency. dark ganache will harden quicker because there is more cocoa butter fat and less milk in it.

chocolate buttercream

1 stick butter - room temp
1/2 cup cocoa
3 cups conf sugar
1 tsp vanilla
3 - 6 tbsp milk - room temp

mix the cocoa and the butter then add the remaining ingredients - start with 3 tbps of milk gradually add to get the thickness you want. this filling is especially yummy with yellow butter cake

ganache is basically a mousse, minus the egg yolks. it will hold up at cool room temperature for up to two days. the only other thing i can think of is choc buttercream, but not as yummy- i think the chocolate buttercream dream is just a version of buttercream- posted in the recipe section here.

Oh you can make a mousse with chocolate jello instant pudding mix and add it to a carton of Pastry Pride. Whip it up and there you have a wonderful yummy chocolate mousse. It can be left out too.

I like chocolate buttercream really well for a filling and if you mix it for quite a while, it gets lighter...the whipped ganache is heavenly though icon_biggrin.gif
