I have a two tier cake (10 and
that my husband is delivering to a co-worker tomorrow AM. It is about a 1/2 hour commute to the office, the cake will sit all day, and then it will be transported home by the co-worker (another 15 mintues).
My question is should I fully assemble the cake tonight/tomorrow AM before I send it in, or should I send in the seperate layers and have them assemble once it is home? I'm worried that the cake might collaspe if it sits too long.
Both layers are covered in fondant and I have already attached the border to the top layer so the cake should still look finished even if they stack them at the party.
What do you think??
Assemble before giving to the customer. They don't want to have to pay you for a cake, then finish the job themselves. If its only two tiers it shouldn't be a problem with the travel time. Just make sure to properly dowel it. And i would stick the layers together with a little buttercream to glue them in place.

you should also do a dowel threw the center of both layers going from the top to the bottom.
I have stacked wedding cakes the day before this way and transported them with not problems.
Doweling is the most important step.
make sure you have the correct number of dowels for the size layer that will be on top.
When in doubt use more, better to have to many and a stable cake than too few and have a disaster.
After stacking the cakes sharpen a dowen that is long enough to go all the way through both layers from top to bottom.
Making the dowel sharp will allow it to go throw the board between the layers
