I just made my 1st square cake today. I read the tutorial on making corners square and sharp and tried to follow the steps. I do ok with that but not great. The cake is iced in IMBC. I have read lots of threads on smoothing icing. I've gotten better with BC, but for the life of me can't get the hang of smoothing IMBC. Today I tried the hot spatula method and when I didn't get it smooth enough that way, I put the cake into the refridgerator for a while and then tried the Viva trick. Nothing seemed to work for me. I was only making things worse so I gave up.
Any words of wisdom for me? I always appreciate any help I can get. Your suggestions and advice can only help me improve! Thanks
The cake looks great! I know that I am pretty anal about how smooth my cakes are, but I've come to realize that close enough is okay. I've noticed that looking at cakes in books, the icing isn't that smooth either! Good job though!
this cake is adorable. Now did i read correctly that you used IMBC? If so i for the sharpe corners after getting them as sharp as you can by hand, i would then fold a piece of waxed paper or parchment, in to a sharp crease then but up to the corner and smooth with that, then i would pop the whole cake in to the fridge and let the icing get hard, when hard peel the paper off and you should have a nice sharp corner.

Have you ever tried using a cold statula method to smooth your icing?
I also wonder can you use the frosted upside down method to ice a square cake? hmmmm i don;t make many but I a going to have togive it try!

i've never used imbc, but i think it looks awfully smooth
i agree that even if you look really close at pictures of "professional" cakes, there are some imperfections. i've learned i can't spend an hour trying to get mine smooth ![]()

I think you did a super job, but I know what you're going through... I do this every time I make a cake too. I stand back and find something wrong with nearly every aspect and make everyone around me crazy! I think that typically the artist is his/her own biggest critic. You are probably more aware of the imperfections than anyone else! I'd be very proud of this cake. HONESTLY!! I think it's very cute and it is after all a cake, so if it looks like it's frosted and not something that popped out of a mold, that should be acceptable... right? ![]()
